How to Store Your Chocolate Properly: Tips from a Chocolatier

Chocolate is one of life’s simple pleasures — but it’s also surprisingly delicate. The way you store it can completely change its flavour, texture, and appearance. Whether you’ve bought artisan Belgian chocolate from Choc & Moi or received a beautiful gift, proper storage will help keep it tasting perfect for as long as possible.

Here’s how to look after your chocolate at home.



Keep Chocolate Out of the Fridge

It’s tempting to pop chocolate in the fridge, especially during warm Sydney days, but refrigeration is one of the worst things you can do.

Cold temperatures cause:

  • Sugar bloom (a white, powdery look on the surface)

  • Texture changes

  • Loss of flavour

  • Condensation, which damages the chocolate

Chocolate prefers stability — and the fridge is anything but stable.


Store Chocolate in a Cool, Dark Place

The ideal storage temperature for chocolate is 16–20°C, away from:

  • Direct sunlight

  • Heat sources

  • Strong smells (chocolate absorbs odours easily)

A pantry or cupboard works well, as long as it stays cool and dry.


Humidity Matters

Chocolate and humidity are not friends. Moisture can cause sugar bloom and affect the smoothness of the chocolate.

Aim for a place with low humidity, ideally under 50%.

If your home tends to be humid — especially near the coast — choose the coolest, driest room rather than the kitchen.


Why a Wine Cellar Is a Great Place for Chocolate

If you’re lucky enough to have a wine cellar, you already have the perfect chocolate‑storage environment.

Wine cellars offer:

  • Stable temperature

  • Low light

  • Controlled humidity

  • Protection from odours

This is exactly what chocolate needs to stay glossy, smooth, and flavourful.

Many of our customers store their Choc & Moi bars and pralines in their wine cellars — and the results are excellent.


Keep Chocolate in Its Original Packaging

Your chocolate is wrapped to protect it from:

  • Light

  • Moisture

  • Odours

  • Air exposure

If you’ve opened the packaging, wrap the chocolate tightly in foil or baking paper, then place it in an airtight container.


Final Tip: Enjoy It at Room Temperature

Even if you’ve stored your chocolate in a cool place, let it come to room temperature before eating. This brings out the full aroma and flavour — especially with premium Belgian chocolate.
